Reflecting Kerala’s role as a major spice producer for centuries, our dishes feature such ingredients as cardamom, coriander, cloves, curry leaves, ginger, nutmeg, tamarind and turmeric. In addition to creating the wonderful flavors that are unique to Indian cuisine, many of these spices have anti-inflammatory and anti-bacterial properties.
